Important Information

Entry-level hourly wage is $20 - $23 per hour

Room and Board $80 per week - this is your only expense! SAVE MONEY - to travel! get an apartment! pay back loans! This includes private accommodation, all meals, and utilities including basic internet.

Must be able to work until THANKSGIVING MONDAY in October! Start dates are flexible in May, June, or July. We hire a small number of “summer” only students.

You must live on-site. All accommodation is in renovated cabins, private rooms with private bathrooms. Staff eat in a common dining room. Enjoy canoeing, kayaking, swimming in the lake, hiking trails to see wildlife, fishing, and more, on your time off.

We accept foreign applications that have legal permission to work in Canada. We are happy to discuss your work permit dates and help you with possible extensions.

Duties:

Ensuring Arowhon Pines recipes and systems are always followed by all staff

Creating and revising recipes as required

Liaising and cooperating with dining room manager, supervisors, and staff in a friendly, constructive and calm manner

Ensuring compliance with sanitation standards so that kitchen is always maintained in a clean and hygienic state

Serving fresh, tasty foods, breakfast, lunch and dinner daily to resort guests

Serving fresh, tasty foods, breakfast, lunch and dinner daily to staff

Hiring staff
-
Dealing with suppliers, pricing, delivery – accepting food, proper handling of food, storage and rotation

Opening and closing of the kitchen following the Kitchen Operations Manual guidelines

Revising menu in the winter, pre-season, including recipe creation and revision, recipe system and index maintenance

Daily supervising of service line-set up, cooking, assisting, teaching, troubleshooting as required

Expediting of food service as required

Training of Chef de Parties and assistants on service station set up, over 2 to 3 service sessions per day

Food preparation tasks as required to ensure service station is completely set up, including but not limited to: soup and sauce preparation, overseeing vegetable station preparations for quality control

Staff training and assessments, with kitchen manager, throughout the season

Overall controlling of kitchen operations on a day-to-day basis, following guidelines

Responsible for all foodstuff orders for business, with the kitchen manager

Establishing kitchen cleaning schedules, working with the kitchen manager to do so

Duties:

Preparation and baking of all yeast products, on a weekly rotation

Maintaining par stocks including all breakfast pastries. Products include but are not limited to: Challah, multigrain bread, rye, baguettes, sour doughs, pizza doughs, lunch breads, muffins (both sweet and savory), croissants, pain au chocolate, danishes, turnovers, scones, etc…

Production and maintenance of par stocks and pastry products required by other kitchen departments, such as for box lunches – banana bread, date bars, brownies, and breads
-
Production and maintenance of par stocks of all gluten free bread products for specialty diets
-
Preparation of basic pastry preparations - such as muffin mixes, quick breads, tarts, pies, cakes, squares, and cookies, using recipes supplied by the company

Preparation and maintenance of stock of special dietary desserts, gluten free desserts, etc.

Maintaining cleanliness and hygiene in Bakeshop to company standards, using the cleaning and sanitation methods provided by the company
-
Following all recipes, policies and procedures of Arowhon Pines always, regarding food handling, health and safety, and personal hygiene
-
Reporting to the pastry chef or executive chef for any issues or corrections needed in the Bakeshop recipes
-
Maintaining par stocks of baked goods needed by other departments, as identified on the “Bakeshop menu board,” including but not limited to: Box lunch brownies, trail bars, banana bread, puff pastry, English muffins, baguettes, etc., in amounts to suit the needs of the business
-
Reporting to the pastry chef, executive chef or chef de cuisine for any product needs, recipe adjustments needed, or any issues experienced in the day-to-day operation

Helping with lunch, dinner and buffet dessert preparation as instructed by Pastry Chef.
Requirements:

5+ years of bread baking and pastry experience
-
Completion of secondary school is required
-
Completion of a college program for bakers or with an equivalent culinary focus is required
-
Food safety certified
-
WHMIS certified
-
Experience working in a remote location is of the utmost importance
-
Ability to work as part of a team
-
Experience in a fast-paced quality establishment where foods are made from scratch
-
Ability to communicate in English
